He likes the shape first of all. In the past we have had pans that were rounded and this cooks more enev then our old round pan and this stores better. The surface is really nice too. I think the carbon steel is pretty solid. We will have to come back for an update in a year and comment on how it held up. Other pans have disappointed us by flaking. ### ⭐⭐⭐ Moral of Story: Read Product descriptions VERY carefully! *by O***A on January 31, 2015* I bought this because the product title said it was nonstick carbon steel. The title did not say that the pan has a non-stick coating, which is not my first choice in cookware. I am not a metallurgist, I assumed that nonstick carbon steel meant that the food would not stick to steel, not that carbon steel requires a non-stick coating. It is supposed to be handwashed, which is also something I eschew. Finally, the manufacturer recommends you buy TWO, so this to turn your fried you just lie on pan on top of the other, hold the edges, and FLIP the pans over. While this sounds great in theory, in practice, items may OR MAY NOT, fall on the opposite side, especially with the multiple slanted and angled surfaces on the pan.On the plus side, it does make a good crisp potato. It does not taste like a fry because there is no fat, but that is the tradeoff for better health.
