Review: Perfect especially if you need smaller batches - I've been using the Yu Yee compressed earwood mushrooms for years, and have been rather happy with them, except for the fact that you could only hydrate them in batches of what amounts to medium- sized salad bows, unless you were willing to take a saw to it. So I was very intrigued when I saw this competing product show up, where the mushrooms aren't pressed into a brick and I could literally hydrate one at a time. And, I was not disappointed! The mushrooms taste and have the same texture (which is to say, neutral taste and slightly rubbery/crunchy feel), and the only difference is that they are larger than in Yu Yee's product. They hydrate faster as well, in only ~5 minutes using lukewarm water. When you hydrate these mushrooms, you can expect at least a 10x increase in weight. So basically, you get over 50 servings of 1.5 -oz mushroom portions.

**Q: Should I use cold water or warm water to soften it?**
A: Re-hydrate with cold water would give you the best taste, but it will take longer, typically around 1 hour but timing could vary. You will know when these wood ears are ready when they have completely softened. Warm water would re-hydrate faster, normally around 15 to 20 minutes depending on temperature.

**Q: To seller: if i were to purchase today, pls let me know what month the fungus was harvested? where in northeast china is it harvestied/processed?**
A: Thank you for your interest in our product. We are not the manufacturer, we import these products from China. Based on our understanding, these wood ear mushrooms are grown and harvested in Northeastern China, mostly in Jilin province. These mushrooms are harvested twice a year, with the fall harvest typically starting in Sep/Oct, lasting for a few weeks depending on weather conditions. After harvest, the wood ears are naturally dried and then stored until further processing. Processing mostly involve washing/cleaning the mushrooms, further drying, and testing for filth/microbial/foreign materials. The manufacturer will base their processing schedules on the orders they receive, so the actual date of processing may vary depending on timing of their orders. The wood ear mushrooms available for sale currently are from the 2019 fall harvest.

A: Thank you for your interest in our product. Apologies for the delayed response, as we have been short-staffed lately due to the COVID-19 pandemic. This product is not certified to be organic, so it likely is not grown in organic soil. Fungus type mushrooms are typically grown on tree trunks, fallen logs, crushed wood, or a combination of these. They are not grown in typical soil like other green leaf plants or grains.

This is, hands down, one of the best dried wood ear product I have ever used. The pieces, when reconstituted, are small, tender for a dried wood ear, and have no tough parts that need to be trimmed off. It has a mild, earthy flavor and adds a nice texture to dishes. I chop it and add it to soups and stir-fries. Yummy! Thank you, Zestful Foods!
