Put a drop or two in a mushroom risotto and it pepped up the flavor considerably. Probably be good in a pasta dish made with herbs, garlic and oil or in a spicy salad dressing. **Q: How does this compare to Vietnamese fish sauce?**
A: It is very smooth and it is only made from anchovies, not other varieties of seafood, so it has a purely anchovy flavor.  I prefer it by far to the Asian fish sauces, although I do enjoy them sometimes too.

The colatura is what the ancient Romans used as Garum for giving a wonderful salty taste to various foods. I have been using Asian fish sauce, (the Red Boat is the best) for Garum in my cooking. Now I tried the Colatura and it is very good the only drawback is that it is quite expensive. It comes in a little bottle and lasts for shorter time than the best Thai fish sauce. But either of them are great addition to cooking.
