As with any processing there may be an occasional few missed. I only tried two jars and both did not contain any bones. What separates these from the grocery store varieties is texture--soft, creamy, and buttery. The flavor profile is what you'd expect--salty (you could use briney given the context)--aggressive, and in your face. Use them as is, in small portions. I'm a simple person, and these worked for me: tortilla pizza--put them on after it's out of the oven and cooling; tapenade: on the surface of your choice, and add a few capers; bareback: saltines work with some fresh mozz, and if you happen to have them, cherry tomatoes and basil.
