So … I decided to try this, following good reviews from others, and indeed, this is fantastic. Don't be alarmed by the price--this is quite a lot of galangal, given that it is dried and so lots fit in a 3.5 oz package. You only need one or two pieces to hydrate and it will do the job. Don't forget to also get lemongrass and Kaffir Lime leaves--the same company carries them and I'd ordered all three.
