Diastatic malt powder is malted barley and contains enzymes for converting starches into yeast consumable sugars. It's for baking or fermenting. Nothing to do with malted milk. **Q: How much of it is needed in a bread recipe, lets say, a 3 1/2 cups of flour?** A: I use 3 1/3 cups of flour in my bread (1.5C whole wheat and 1.5C+1/3C bread flour), and I use 2 tsp. of diastatic malt powder. My father-in-law used it for a better crust, and although it may be confirmation bias, the crust doesn't seem as... crusty when I don't use it. **Q: Can I use this to make malted shakes?** A: No, this is the type of malt used in bread making. You would want to use non diastatic malt mixed with milk powder. Essentially go to the grocery store and buy malted milk powder.
