From the manufacturer Hawkins Classic Pressure Cooker The Classic is Hawkins' range was introduced by Hawkinsand has been kept up to date by numerous innovations and improvements over the years. The latest improvement, introduced in 2005, is a superior pressure regulating system that controls pressure to a narrower, more efficient range, reduces sprouting of frothy foods (such as dal) and is easier to insert and remove. The safety valve is located under the lid handle bar so that when it operates the steam is safely deflected downwards. The gasket has minimum exposure to steam inside the cooker, does not rub every time the product is opened and closed - so lasts longer. Suitable for gas, electric, ceramic and halogen cooktops. Stay-cool handles. Fixed sturdy pivot does not put pressure on the plastic handles as it is a part of the metal handle itself. Thus handles last longer. Recommended for use on gas stoves.

**Q: Can you fry chicken in it**
A: It’s like any NO COVER cooking pot you can deep fry/roast with it..just remember to adjust heat accordingly.  
***Remember:  Aluminum pot material conducts heat and raises oil temperature quicker compared with steel pot material.

**Q: Would like to use this for canning. How many quart jars will fit in the 8 liter pressure cooker?**
A: All things equal it would depend on the jars dimensions on how many you can fit.  Standard measure conversion 1 liter =1.05669 US quart. Hawkins instructions/recipe book has a Sterilization method applicable to my aluminum 5 liter with exceptions in: How to cook in it, releasing pressure, separator cooking, cleaning/care, and adopting recipes.  I would recommend to find documentation for use of the 8 liter from the manufacturer Hawkins. It’s a different experience for each person and product type.

**Q: The safety plug blew out of the lid.  Can this be replaced, or must I throw the whole thing away?**
A: You can replace safety valve.

**Q: What's the difference between classic the blue label one?**
A: I looked in the comparison of products on Amazon. It seems that the blue label is a newer model than mine with a more thick bottom.
Else it don't seem there is a lot of difference. Good luck with it.

After some of the bad reviews I read I was doubtful...but I have missed my pressure cooker as I always had one but wanted a small one and the 2 litre, although it IS small and cute too, seems to fit the bill. On reading the instructions I was a tad worried, especially by the lid situation but really, its easier than it seems at first and I made a lovely meal from it the evening after its arrival, and felt satisfied by my meal, as since xmas 23 ive been struggling with an Air Fryer and was starting to feel despondent of ever being able to cook a satisfying meal again lol. My only dislike is that non of the meals in the recipe book are traditional English grub but it IS an Indian product so understandable...but thankfully I used a pressure cooker for 25 years before to cook for a family of 5 so it wasnt too hard to piece together and there IS a separate list at the back for individual items and the required cut sizes and timings. The 2 litre does not recommend cooking foods that create froth on cooking such as legumes etc as you will need much more space to allow for the froth so as not to block up the hole vent. Its easy to clean and first recommended test use to get comfortable with it is with water and vinegar which leaves a handy 2 cup meaure mark around the level. Two uses have not stained the bottom at all as in some of the comments so Im glad about that but. If it does then it is only the natural wear and teae of usage Im sure, comparing to the old ones I used to have over years gone by. All in all, I love this little gadget and will eventually go bigger, maybe, so I can make the Legume curries in the recipe book so I can share my food with others as this one makes enough for one person and is fine for just me.
