Meaning it can ONLY be called Bomba rice if it’s grown and raised in this part of Spain. Just like you can only call Champagne sparkling wine when the grapes are grown in Champagne, France or Bourbon only if brewed in Kentucky. I have used this rice quite a few times when making several paellas and it has never disappointed us or our guests. Even native paella experts. It always comes out great. It absorbs several times it’s weight in liquid, the most of any type of rice. It’s also flavorful and it cooked correctly makes great succorah. And if you happen to over estimate the right water-to-rice ratio (a frequent debate) it is very forgiving, allowing you to cook it longer.
