The canner must be able to be kept at a boil when processing jars. **Q: Why is gas burner preferred over electric burner? Is there a safety issue?** A: No safety issue. Its just a matter of convenience. Its so much easier to can on a gas burner especially for large batches to keep the heat out of your kitchen.
