The flavors are at that magical level right on the cusp between too much and too little of the hot pepper, the ginger the salt and the acid. Each is distinct and strong, but none goes over the line. That is a talent with such flavors. Additionally, I never tasted the separate flavor of the turmeric root beyond a carroty likeness, good cuz I don't really like turmeric flavor in my foods. This works as a garnish, a side, or added into an already cooked dish to zazz up the flavor. My introduction was watching Korean TV. I shouldn’t have processed food,(nobody should, really) so this being jarred left me hesitant. I’m so glad I decided to try it. Even my kids liked it, including the one who has huge oral sensory aversions. It doesn’t taste like it’s been sitting on the grocery store shelf, but truly fresh as advertised. American style cabbage was used, the fermentation process is not ongoing like with kimchi, and it's not tangy.
