The only paper you remove is the paper "ribbon" that protects the edge, not the bottom. Aside from that, this is delicious. I ordered in December 2023 and again in February 2024, but I'm not sure if there would be a decline in quality the farther you got away from Christmas. Still delicious, and it's SUPPOSED to be dense and chewy. Dense and chewy is not "hard." You can make this yourself easily, but it's very clear so many of these negative reviews are by people who don't know what this product is supposed to be like and that the "paper" is edible. It's dense and chewy, just as it's supposed to be, and though it's less expensive than a couple other brands, there's no loss in quality. It could be just a tad less sweet for my taste. That's my only criticism. Most of that extra sweetness comes from the powdered sugar sprinkled on the top. The company SHOULD mention it's edible rice paper on the packaging, but the packaging is in Italian and this is imported but made for an Italian audience who likely already knows. Highly recommended. It's satisfyingly dense and chewy, and the flavor is sweet and citrusy on one hand, but there's a lot more going on with the flavor overall than just the citrus notes.
