Spelt is an ancient form of wheat, but it has a distinctive flavor. I bought it to make “cookies of joy,” a recipe from Saint Hildegard of Bingen (Germany), a 12th-century Benedictine abbess. The spelt gave a nutty flavor to cookies, as well as a more interesting texture. I made these cookies for coffee hour at my church. Excellent reviews.
