As delivered the knife required sharpening for best results. Sam at Rutledge Brands responded immediately and proactively to my concerns about this - it's clear that this supplier actually cares about customer satisfaction and the quality of their product.Now sharpened to a nice edge, I've found the substantial handle (I have larger hands), continuous curve of the blade and tapered profile makes it very effective in working with chicken and beef for trimming, slicing and making thin cutlets from whole chicken breasts.Things to know:1. It's a strong, handle heavy knife with quite a bit of overall heft and stiff blade, despite it's tapering, thin profile. Much less delicate than a classic Japanese knife, it's still very precise and agile in use and I have no fear of accidentally breaking it.
