I use them for cooking and sprouting. They have yielded nearly 100% sprouting capacity, which exceeds the beans I had previously. I had to learn some patience ... As they often come mixed with mung beans in sprouting mixes. As well as sometimes with lentils. The Adzukis take longer. So these other legumes will be quite a bit ahead, even making the Adzukis seem to be "dead". I sprout them alone now in their own jar or tray, and I eat them with just a 1/4 to 1/2 inch sprout showing. That is when they seem sweetest.
