Water can added to Glucose Syrup without any crystalisation. It would only crystalise if not heated correctly too fast or too high heat. The same as heating sugar. You need to gradually heat Glucose Syrup in 1 pan on a low heat to warm temperature. Then in a 2nd pan gradually heat water to same temperature also on low heat. Then Slowly add the water to the Glucose Syrup whilst constantly stirring.
