Forest Honeydew, Miele Melata di Bosco, is produced between July and August on the island of Sicily. This dark amber honey with opaque hues from red to brown has a rather complex character. Honeydew is not a real honey as the substance does not come from the nectar of flowers but from the lymph of certain plants. Forest Honeydew has a marked and penetrating aroma of spices including black pepper, juniper berries, and cloves. The flavor is reminiscent of cooked vegetables, carob, rhubarb and liquorice. It is nicely persistent and not very sweet, and it has a melted brown sugar aftertaste. This product crystallizes slowly.
