### ⭐⭐⭐⭐ Nutritious & delicious gluten free pasta!

This is great-tasting gluten free pasta; it’s made primarily from green lentil flour and pea flour so it’s higher in protein and fibre and much more nutritious than lots of the gluten free options out there made with corn or rice. I add it to already-boiling water and then simmer for 8 minutes for the perfect al dente texture. It keeps its shape so there’s no mush; the pasta does have a very slight tendency to stick together but not in great big clumps. Tastes (and looks) especially good with pale, creamy sauces or green pesto but any pasta sauce would work well. I find that the pasta itself has so much flavour that you could pair it with a fairly bland sauce and still end up with a decent dish. A bit expensive perhaps and not as high in protein as edamame pasta but if you're avoiding soy, lentil pasta's a good alternative; it's compatible with a broad range of healthy diets and reassuringly organic too.
