DOP certified balsamic vinegar production is subject to oversight be the DOP consortium. The balsamic can only contain grape must and nothing else - no wine vinegar, no sugar, no caramel coloring ... nothing. It has to be aged for a minimum of 12 years, and comes in a specifically shaped bottle which the produce has to buy from the consortium. It will also cost you 2-3x more than this depending on the source. I have a couple of bottles of the DOP and it is truly amazing balsamic, but at about $100 for a small 3.5 ounce bottle I use it sparingly and probably wouldn't put it on a salad. I've not tried this particular balsamic, but from the reviews, it looks like a good balsamic for salads and many other uses. **Q: can anybody compare this to other 18 year aged balsamics? A lot of the young stuff is barely dense.** A: This is not aged18 years, but is good. You'll have to try a few pricer brands or go to a DOP to get much better, althugh tastes vary of course.
