Jack Daniel’sⓇ craftsmen fit the white oak staves together by hand, then carefully toast and char the inside of the barrel to caramelize the wood’s natural sugars. The whiskey matures in the barrels for years-- expanding into the wood during the summer heat, and retracting with the cooler temperatures-- developing its amber color, plus most of its taste and aroma. A barrel is only used only once-- the company then sells them to collectors, craftsmen and other spirits makers to store rum, tequila, scotch, Irish whiskey and other liquors.
