The main image is obviously from an older photo but we cannot change photos every time there is a new batch. Rest assured you will not receive an expired product. **Q: Any idea how long the shelf life is unopened?** A: opened and not refrigerated is about 4 days Refrigerated 7-12 days, I have a food vacuum sealer and break it down to 1 pound bags and it will keep for up to 4 months. there are very little preservatives in it so it will not last long in open air. **Q: What is kippered beef.** A: Kippered meat is a meat that has been cleaned, salted, and smoked(or dryed in some other way). It says nothing about the type of meat or the quality of it. **Q: How long would this keep in the refrigerator after being opened?** A: Once opened I would advise portioning out and storing in resealed vacuum bags, and/or freezing what will not be consumed within one week. I kept in mind what other reviewers said about the greasy coating, inconsistency among different pieces, and the pepper being too strong, and after trying it I can say those things are not as bad or noticeable as others have stated. The pepper makes it a little spicy which is fine to me, and I wouldn’t have even noticed any grease had I not read about it beforehand. I had about 6 pieces already and have not noticed any inconsistency. It seems about normal for beef jerky to me. The main difference is the slices are not as thin as most other jerkies, which makes sense since it’s in bulk. I also plan to follow the recommendation of another review I read to freeze some of it in smaller bags, since the seller instructs to consume or freeze it after opening the vacuum sealed bag. Jerky is one of my favorite snacks, but it’s expensive, so I really appreciate this seller for making it available in bulk. It’s way cheaper than any other jerky I could find anywhere, and the quality is excellent in my opinion.
