The best part of this dry fish and the major reason for my purchasing it - is that it's not salted AT ALL.

A: Dried Anchovies have a long shelf life. You can keep up to 6 to 12 months. Store in a dry hygienic place. You can also store in the refrigerator.

**Q: Whether smoke is given while drying or not**
A: This product is fully machine dried. There is n smoking during the process. Very clean neat and odorless dried fishes processed by Kerala government coastal development corporation.

**Q: Are the anchovies cleaned? I mean head, tail and insides removed? Also, do they need to be stored in a freezer if I want to use them later**
A: This product is neat and clean. But the head, tail and inside not removed. We use freshly catch anchovies and dry traditionally. We also have fully cleaned (head, tail, inside) anchovies.

Normal life of dried anchovies are 6 to 12 months. But We sell most of the batches within a month. If need you can store in the freezer. Better store in airtight jars with room temp.

At home I loved having it with pakhal rice. But unfortunately living in Delhi and craving for dry fish is painful. Then I found this brand that sells and delivers dry fish. I was sceptical but when I received it I absolutely loved it. Great taste, salt was balanced not too much. Quantity and quality according to the price is good. It is definitely value for money. The sizing was good. The dry fish was not too dry. You just need to submerge these dry fishes in a container for 10-15 mins and you can directly pour it in the vessel to cook. This dish does not need any cleaning. It’s the best product I bought so far. And I’m going to try other options as well.
