When I did the classic "hot water" approach, it looked like my cast iron was rusted (similar residue).** A: The trick is to dry cast iron quickly. After washing, place it on a burner and turn on the burner for a short time so the residual water evaporates. That is also the time when I might add a coating of oil then wipe off the excess oil after the pan has cooled. I have been doing this with cast iron pans for a zillion years and these hand-me-down pans will probably outlast the apocalypse. Happy cooking! **Q: Somebody attached an instruction to the review, and it says to use it between 350 to 400 degrees. Is that how low you cook your pizza?** A: You did not read the instructions correctly. 350 - 400deg is the temp for seasoning or re-seasoning. Not for cooking.
