Poor shelf date
Love the flour but I ordered 10 bags to store for the year only to find out it expires in 3 months ! And I have no recorse they dont exept returns. Very upsetting way to be taken advantage of so buyers beware

A great flour to try for some the gluten intolerant....
Great flour that's genetically UNmodified. Many friends who are gluten intolerant and some who are coeliac have put my honey who is gluten intolerant onto this with excellent results with no side effects regarding my honey's intolerance to gluten. We make bread, pancakes, waffles, cookies and other stuff like butterfly shrimp with this and have no problems. Everyone is different so if you choose to try it keep a watchful eye. If you, like our family, don't have problems you're fortunate and have filled a big void in being able to bake again safely without problems. On the other hand I'm sure there may be some who may not. We haven't heard anything negative. That doesn't mean they're not out there. The coeliac who put our son's wife onto it amazed me when she told me she has no problems using Einkhorn flour. God only knows how many plants have been genetically modified to suit the needs of commercial growers and processors. God only knows how many people have paid and continue to pay the price for problems brought about by the genetic alteration of plants for commercial expediency.

Really customers/raters? Dont criticize a product because you didnt research this type of flour before buying! I only had commercial einkorn cookies before buying this flour but i read about einkorn wheat so expected it would be different from hybrid u.s. wheat which is exposed to more chemicals also. I am loving everything i make with it. Yes it does seem to have less gluten which is fine with me. Customers educate yourself on the types of flours recommended for the product you are baking. My sourdough has a lovely consistent crumb which is not typical with artisan sourdough BUT it is delicious, cuts easy, looks beautiful, smells heavenly! Its about personal preference & knowledge.

Excellent and tasty
It's wonderful!I have made bread, rolls, brownies, and pitas.I bought the Einkorn Cookbook by the Mallons and have enjoyed it. I wish I had bought the hard copy and not Kindle. It is hard to navigate, at least for me :-)I love this flour and keep a lot of it in my freezer. I am a medical professional, I work with diabetics and I believe this is a good substitution for our incredibly hybridized and "messed with" Dwarf red wheat that most of the world does not want to buy from us! This product is grown in Italy.I still advocate decreasing our wheat consumption for health reasons but I see this as a healthy alternative for the US products.
