I do not think a "paper taste" is something I've ever noticed when skipping the step, but aside from rinsing out any potentially-lingering paper flavor and sealing the filter to the sides of the dripper, this step also preheats the dripper, which should slightly reduce heat loss during the dwell stage. However, I find I prefer using a finer grind and a shorter dwell time (no more than 2:45 from bloom to completion of draw-down), so I honestly don't think heat loss is a big concern the way I use the CCD.
