Review: Superb for cutting Prosciutto and other cured meats easily and safely - I purchased this knife after being given a Prosciutto ham as a gift and had no idea how I could go about slicing it even reasonably thin. I looked at a number of different products available and this one caught my eye - a) it has an accident protection attachment and b) this doubled as a guide when cutting the ham which allows for uniform thickness/ thinness depending on how you angle the knife and how much pressure you use. The knife itself is really sharp and (so far) I have chosen to use it with the anti-accident attachment - at least until I am confident in my knife skills and ability to cut thin consistently. Brilliant idea that I have only seen from this Company.

These hams are hard when cold and it is easy to slip and cut yourself. The guard makes this a much safer process! I recommend this knife with no reservations!
