A: I would  say an 8 or 9 . Great knife I have 4 of thelm  .

**Q: What is overall length of knife?**
A: I measured a 6 inch Dexter it was 11 inches overall a 5 inch Dexter is 10 inches .

**Q: Is it stainless steel? does it rust?**
A: stainless but will rust in saltwater

**Q: Do they come in different levels of flexibility or are they all the same? Victorinox does give you a choice.**
A: Not that I know of . They are flexible I do fish with thelm  often . Great for deboning  beef and pork too.
