The texture is the same as any other good udon noodles made at home from dried noodles. You control the texture be deciding how long to cook them. Each 100g contains 344 kcal, 2.1g fat - of which 0.4g is saturated, 66g Carbohydrate of which 1.1g are sugars, 4.5g fiber, 14g protein and 1.9g salt. Compared to one other brand of udon noodles that I eat (JFC J Basket), these have less carbohydrate, more protein, twice as much fiber, a bit more salt, and more naturally occurring plant fat. The ingredients are organic wheat, water, and salt. The salt dilutes into the water that you cook them in, and I don't use that water after cooking. Personally, I cook half of the 250g package in plenty of water. I cook them for 11 or 12 minutes, rinse them in cold water as the instructions say, and then reheat them with a simple prepared base liquid. I ordered and received these in early March 2022, and the expiration date on the package was 11.22.2023. I found them originally at a Marshalls for a much cheaper price but after trying them I had to buy them again from Amazon. Very Very good taste and texture.One thing though. My Noodles where done much earlier than the directions stated. Almost 3 minutes.
