I grind my own beans with an electric burr grinder** A: The finer the grind, the stronger the coffee. But... if you grind it too fine, it will take too long to go through the filter and may overflow. I set my grinder right on the middle setting and it does not overflow so that is what I recommend. Also, very finely ground coffee can get bitter. **Q: Does the water come in contact with plastic parts?** A: Yes **Q: How many milliliters of water does the top reservoir hold?** A: I don't know because when I put it in the dishwasher it glass all cracked. I can give it an excellent review because it addresses the problem with most pour-over coffee makers- the water not saturating the grounds evenly. This machine has an electric rotating water dispersal system that solves that problem and it does it superbly. I still use it when I do not have to leave a mug full for my sister-in-law. If you want a perfect large mug of coffee for yourself, this is the perfect coffee maker. I do not like paper filters so I bought a flexible stainless steel filter and cut it down to size.
