**Q: Can you cold ‘cook’ the noodles? Just soak them in water till ready to eat?**
A: I don't think you can cold cook the sweet potato noodles.  In fact, I had to cook them longer than the package suggested to make them soft for eating.

A: Per the instructions in the Nutrition Chart pictured - it is 18 grams

As someone who has a chronic illness and cannot eat any form of grains, these sweet potato noodles have saved my life! They taste identical to rice noodles and are so versatile. I will say, these disappeared on Amazon for about 6-9 months, which was Devastating. But when they came back, every single time I order them it gives my husband, me and any friends who eat it horrible diarrhea ! I have no idea what changed. Makes me nervous to order them.
