It's a cooking essential. In gluten free baking, it's a game changer. Adding just a little teaspoon or two to most of your baked goods, makes them much lighter. Gluten free baked goods have a tendancy to be Heavy. If you've ever used the gluten free baking flour called Cup4Cup, you know that it's pretty good and makes for lighter baked goods. One of it major ingredients is Dry or Powdered milk. I usually purchase King Arthur's Flour, because it's a fraction of the price. So, a little of this with it, really helps. Of course it's good to keep on hand for a milk replacement, too. I don't buy regular cow's milk, because I use plant milks. But, you don't want to use only plant milk in all your cooking. If I'm making gluten free gravy or sauces, this works much better than almond milk. It gives it more of an authentic taste. This is a good product and a lot cheaper than most.
