**Q: What are the ingredients?**
A: Alto Adige is the Italian region where this SPECK is made. This speck is made from the hind leg of a pig, though the leg is boned before curing. Speck is also given a two-part curing process: First it’s rubbed with a blend of spices and salt-cured in the Mediterranean style, and then it’s cold-smoked in the central European tradition. Though the specific recipe of spices is a well-kept secret, it’s usually a blend of juniper, pepper, bay or laurel, and garlic. The actual recipe is a well kept secret. Many people prefer Speck instead of Prosciutto, I do too :-)

**Q: How long would this product keep without refrigeration?  I'm looking for extended backpacking options.**
A: I'm not certain, but think beef jerky. It has a somewhat softer consistency but similar shelf life. It was good for us over a period of a few months - refrigerated - before it grew mold. I suspect it would have done better outside of the refrigerator and unwrapped and permitted to stay dry (perhaps wrapped in dry cloth). Outside of the refrigerator, as long as you can keep it relatively cool (out of the sun), I don't see why it couldn't last at least a few weeks. Speck is normally stored in a cellar.

I would guess it really depends on how long your "extended" backpacking options are. If you are doing the Appalachian Trail over a period of months, this might not be your best option. If you are going out for a few weeks, this would probably be a good option. Allow air to get to it whenever possible. Fungus will be your primary concern here.

Tasteless and chewy like gum. It did not resemble speck and was execrable. Sad because the large piece of Bresaola I purchased at the same time was wonderful. A very very disappointing quality. Not what one expects when purchasing high end food. I tossed it although I must admit I did consider using it for bait.
