I'll revise later. I am not a professional chef. I am an enthusiast with a number of fine quality Japanese knives that I need to transport occasionally. My longest knife is a 10" Gyuto (Chef's knife). The knife bag is almost twice that long. It bothers me that there is all that unneeded material at one end that is free to flop around (in theory... it's not very floppy). If you are a sushi chef, and need to carry a 360mm Yanagiba, that's still only 14".
