It's unclear whether the wood handles are sealed, but, as with any raw wood parts, care should be exercised to dry them thoroughly after hand washing them (I would not put them in the dishwasher). I rubbed the handles with food-safe cutting board oil as soon as I got them, and will do so periodically to keep the wood from drying out and cracking.
