In an effort to eat better I did a lot of research and learned ancient grains-such as puffed amaranth-are an excellent source of proteins. This is my first time ever tasting amaranth and I purchased these in my quest to eat foods that are considered healthy and beneficial. I decided to order the popped Amaranth simply because for me I thought it would be the easiest way to incorporate them into my diet. I ate some right from the package as is (does not exactly taste or look like popcorn). The taste sort of reminds me of plain crumbled rice cakes. I do not mind the taste at all and like to add this to my smoothies or top my oatmeal with it.
