They are light, fluffy and just what you are used to getting at your favorite diner or cafe. Thats the good news. Unfortunately they leave something to be desired. They dont taste bad by any means...they just dont have that extra flavor kick that you seem to get at your favorite diner. I wouldnt call them bland but IMO you need to add some of your own items to make them better. I suggest a teaspoon of vanilla for every cup of mix. Maybe some brown sugar. Perhaps a little malt? You can also try using milk instead of water which would also help a little.So, not a bad product but you have to take into consideration the cost as well. They arent cheap and while they are a complete mix you still have to weigh out the value. Im going to try another batch but this time Im adding some vanilla. That might make them a 4/5 star product but out of the box with no modifications I can only give 3 stars.BTW - as for making smaller batches of them - I used roughly a 1:1 ratio of mix to liquid and it worked out fine. Always start with a little less liquid aince its easy to add. So, Every 1 cup of mix is combined with about 3/4 cup of liquid to start. It is a large bad that only provides directions for large batch - for businesses of really large families. However, we only have 3 in our family so we cut it down to smaller servings. Just measure as you would for any other pancake mix.This is also Great for waffles (which is what we mainly use it for). After having the best sweet cream waffles while visiting a Old german Mill / Restaurant in San Antonio Texas on vacation, I HAD to have more for home. They have a nice gift shop that sold small packages of their mix but the cost was too steep for me. So I found this mix on Amazon hoping it would be similar. It is.It does not have directions to use as a waffle mix so I just use the same amount with an egg (it already contains dried egg in the mix) as you would with a regular waffle mix. Just google waffle mix directions.I like that is comes in such a large amount so it lasts a long time and the price is worth it. Poked around a bit and found this mix. I love buttermilk pancakes and waffles so I decided to give it a shot and I'm glad I did. I didn't have tremendously high hopes to begin with - I mean, how good can a "just add water' pancake mix be? - but this greatly exceeded them. In fact, this is by far the best simple pancake mix I've ever tried; all you need to do is add water and bingo, light and fluffy pancakes which are great with butter and grade-A maple syrup and even better with wild Maine blueberries or mini chocolate chips thrown in.The package comes with two sets of instructions, one for a large (meaning ginormous) batch, if you're going to make the whole bag at once, or one for a "small" batch which would probably be enough for 3 or 4 people. Being just one person I did a little converting - which took a minute, because the instructions are by weight and not by measure - but it came out to 1.5 cups of mix to 1 cup of water making about 6 decent-sized pancakes or 4-5 large waffles.
