The Cellar Made Sous Vide lid was designed specifically for the Rubbermaid Commercial 12, 18 and 22 quart food storage containers. It features a reinforced opening in the lid precisely sized to fit the Gourmia GSV130, GSV140 and GSV150 cooker. This combination creates a nearly air-tight seal on the container with the cooker in place which allows the evaporated water to condense on the underside of the lid. Once it cools it will then drip back into the container creating a cycle which prevents water from escaping. Because the lid is flexible it can be easily installed and removed while the cooker is mounted to the container. The lid can also be used to clamp the top of the bags to the container keeping them away from the business end of the cooker. The lid is suitable for use in a food service facility and is made from LLDPE (linear low-density polyethylene) for flexibility and resistance to cracks, punctures, and certain chemicals and can be wiped clean. Tabs on each corner allows the lid to be lifted easily. CAVEAT- I have not tried making meringues with pasteurized eggs.The user interface is a bit cumbersome, but, with an ON/OFF, set wheel, and an "Enter" button, there's not a lot you really can expect. Which button to push and for how long is not quite intuitive. A label on the shaft helps, though.All in all, its a good unit. After a week in the hospital with E. coli a few years ago, all my eggs are pasteurized. Its easier and cheaper to do it at home. You just need to be careful when you open your container, the steam trapped can burn you. One thing, though. I've used it 6 times, and it just split in the corner and is no longer cleanable, so it is rendered worthless. No wear and tear. No hard use.
