I mill all my own flour and love using these Spelt berries alone in cookies, pancakes, and quick breads or in combination with other hard red and white wheats for yeasted and sourdough breads. The spelt adds a desirable extensibility to the dough and the flavor is to die for. Since the gluten development in Spelt and other ancient grains is not as strong as hard red and hard white wheat, it’s not the best choice to use solo unless you prefer a dense bread.. Adding 10% or so to replace an equal amount of those hard grains in your recipe adds incomparable flavor.

I have grown microgreens commercially for years, but I've never sprouted Spelt before.  My best guess is, Yes, it will.  It might not be 100% germination, but I'd bet 80% is possible.
