Some of the recipes you could probably have figured out on your own (add some vegetables to frozen ravioli? OK...) but most are easy to follow quickie recipes that don't use obscure ingredients. There is even a nice section on "flexetarian" choices for families that have herbivores and carnivores.It isn't high falutin', but for weeknight ideas, it is a great choice, like many of the Good Housekeeping cookbooks. Growing up in the Midwest, every meal was centered around meat, so when I stopped eating it, I didn't really know how to plan my meals. I checked this book out from the library and found it so helpful and the recipes so delicious that I bought it. It has suggestions on how to make most of the recipes vegan, and also has a section with meals you can add meat to, if others in your household aren't vegetarian. But my husband, a meat-eater, loves the straight vegetarian meals as much as the "flexitarian" ones.
