Q: Will the paper textured screen protector fit and work with this case?

If the paper textured screen doesn't exceed the boarders of the device I don't see what it would not fit into the case.

Q: Does the clear portion change color after a while (anyone who's had it for a year+)

Mine is over two-three years old and has not changed color. Still like new!
