I live in Michigan and been soo ONO (Hungry) for Hawaiian Portuguese Sausage. 10 years almost 11 I have searched high and low, near and far for a market that may carry Hawaiian portuguese Sausage. I still have not found it. I decided that I'll get this as their products cut time in half for me.. Since I've been smoking alot of meat, bread, dinner meals,veggies and desserts I wanted to try smoking sausage. I mixed it added a little bit of garlic chili paste since my hawaiian chili peppers have not yet sprouted. Let it sit for a little over 24hrs. First let me say this. When mixing it I just didn't have that scent of portuguese sausage. A day later still no distinct Hawaiian portuguese Sausage smell I grew up knowing like rendondos, Hawaiian brand and the many local brands out there. I smoked it and even made patties. once sampled it was super salty. No salt added on my end just the packet. i get that there are alot of preservatives to keep it packaged but still... Too much salt.. Also the patties didn't come out like the red looking portuguese sausage I know of.. maybe added color dye? idkBut Next time I will use only half a pouch for every 2 lbs and adding a little bit more spices.. Today I will be making another batch but from scratch.
