    The Cheesy Corn Chowder is a Winner

Over the years I've made recipes from the Taste of Home magazine. When looking through this book for more recipes to try I recognized some old favorites.The first recipe I tried was the Garlic Beef Enchiladas. They are fairly good but I made the mistake of using homestyle tortillas which meant only six of them could fit in the baking dish. When I read the note on the edge of the page I decided the recipe needed less salt. So I only used half a teaspoon seasoning salt and half a teaspoon garlic powder. I also left out the sage and only used two instead of four garlic cloves. To make the sauce I also didn't use salt because the beef broth was salty enough. So I did have to adapt this recipe quite a bit but it came out OK.The second recipe I tried was the Tex-Mex Chili. This was a very soupy chili with way too much tomato sauce in it. I left out the Salsa since I didn't want a vinegar flavor and I used black beans instead of the kidney beans. I would not make this recipe again.The third recipe I tried was the Stuffed Chicken Rolls. This is one of the most difficult recipes in the book. You have to flatten chicken breast and then roll it up with cheese and ham. I used Black Forest ham and pepper jack cheese. You put the rolls in a crock pot and top the chicken with a mixture of cream of chicken soup and chicken stock. It turns out really soupy once the chicken has cooked. It is like all the moisture from the chicken seeps out into the sauce. So you end up with dry chicken but a tasty sauce. I had to strain the sauce and make a sort of gravy by first melting two tablespoons of butter in a frying pan and adding two tablespoons flour. Then I mixed in the sauce. This should have been in the recipe but the only indication that the sauce needs thickening is the comment on the side. They say to cook this all on low for 4-5 hours but I'd check it after three hours next time so the chicken doesn't dry out so much. My cat Bear however loved this recipe. She happily ate some of the chicken.Now for the recipe that really impressed. I made the Cheesy Corn Chowder and with a bit of adapting it came out great. They say to chop the bacon but it is easier just to snip off pieces with a scissors. I also used yellow onions instead of sweet. I left out the carrots and added in three teaspoons of chicken base instead of chicken bouillon. I also only used two (15 ounce) cans of corn instead of three (11 ounce) cans. I didn't want to use a processed cheese like Velveeta so I used four cups of shredded cheddar cheese. I also sprinkled in some paprika.  To season the soup more I added in three teaspoons of vegetable base and one teaspoon seasoning salt. This recipe has seven cups of liquid (milk and water) so it needed some additional saltiness. I thought this was the best recipe I had tried but even then it needed a lot of adapting.So my general feeling about this book is that the recipes could have been tested more than they obviously were.If you want to know what is in the book the contents include appetizers, beef, beverages, breads, breakfast, cakes, candies, holidays, sauces, cookies, desserts, pasta, pies, pork, lamb, poultry, salads, sandwiches, pizzas, seafood, sides and soup. There is also a section for grand-prize winners and "mom made it best," There is a section on meals you can make fast.This book is so large it is a bit overwhelming. The best thing to do is to go through it a bit each day and to check off recipes you want to try.I'm sure you will find something to love in this book as it has such variety. There are also tons of pictures throughout the book which will inspire you to try even more recipes.~The Rebecca Review

My mother has had this cookbook for many years. The binding was falling apart and pages were falling out. This was a replacement we gave her for Mothers Day. She liked it a lot!!!

    Just what you'd expect from Taste of Home

I ordered this used from Amazon and it came with very minor damage on the corners of the cover and the base of the spine.  The recipes are NOT low calorie or, at least in part, healthy.  But any good cook knows how to adjust a recipe to make it fit personal dietary restrictions.  I would love it if each recipe had nutritional information but perhaps future volumes will.  The magazine has gone to putting nutritional info with each recipe so maybe it will carry over to the cookbooks.  Having said all that, this is one of those cookbooks you use as a reference book.  You can find a version of almost any kind of recipe.  And if you can't, you probably don't need it.  The organization of the book is a little unusual but the pages are clearly marked with the section.  This is just a good cookbook to browse through -- kind of like window shopping for food.
