Coffee shop machines push water through the coffee anywhere from 15-19 bars of pressure, that’s how it produces that “crema”! Unfortunately Bialetti (last I heard) is made in China, and the quality isn’t the same! There is always higher end bialetti but those are supposed to be stainless steel at a higher price! I have all sizes of the stovetop coffee makers.. from the 2 cup to the 14 cup! My experience is the stainless steel stovetop coffee makers are the best because they’re better made!
