There will be dark brown/almost black splotches visible thru the jar - that is the husk that covers the almonds. Higher end brands remove this because some people are put off by it, but there is nothing wrong with leaving it in. If you don't want it, buy one of the higher end jars that cost $15 for 10 ounces. Make sure you stir it well before using. They is a very think settled piece on the bottom that needs to be reincorperated with the thinner part.
