About Lodge - 100 Years and Still Cooking Originally established by Joseph Lodge in 1896 - and with over 118 years of experience - Lodge is renowned for producing the finest cast iron cookware in the world. The family-owned company, based in South Pittsburg (Tennessee), is the only remaining manufacturer of cast iron cookware in the USA. The Evolution of Lodge Lodge’s legendary foundry has undergone several notable upgrades as the company has grown. What is Porcelain Enamel on Cast Iron? After the cookware has been cast from molten iron in individual sand moulds, a glass particulate called ‘frit’ is applied. The products are then baked in specialised ovens at temperatures between 1200 and 1400 degrees Fahrenheit (648 and 760 degrees Celsius). This causes the ‘frit’ to transform into a smooth porcelain surface that is then bonded to the iron. There is no exposed cast iron on Lodge’s enamel cookware. The black pot and lid rims are made from scratch-resistant matte porcelain. Why Lodge Enamel Cookware? As with Lodge’s renowned cast iron items, porcelain enamel cookware is also incredibly versatile. It is suitable for gas, electric, ceramic and induction cooktops and can be used in any conventional or convection oven up to a temperature of 500 degrees Fahrenheit (260 degrees Celsius). What you Need to Know Before Cooking with Lodge Enamel 1) Wash and dry your porcelain cookware prior to using it for the first time. 2) If your cookware is accompanied by rubber bumpers when unpackaged, keep them safe and use during storage. 3) Although the porcelain (glass) finish is hard, it can be chipped if banged or dropped, so handle with care. 4) Interior protection should be used to prevent chipping if the cookware is stacked. 5) Always lift your cookware when moving it (don’t drag it along surfaces). 6) For added longevity, pre-heat and cool your cookware gradually. 7) Use oven mitts to protect your hands from hot cookware and the stainless steel knobs. 8) Safeguard surfaces by placing hot cookware on trivets or heavy cloths. Let’s Cook! It is advisable to use vegetable oil or spray on your enamel products in order to enhance both cooking and subsequent cleaning. When cooking on the hob, low and medium settings provide the best results due to the natural heat retention of the cookware. Wooden, silicone or nylon utensils are suitable. Metal tools can scratch the porcelain. Caring for Your Lodge Enamel Cookware 1) Allow the cookware to cool naturally prior to washing. 2) Although dishwasher safe, hand-washing with warm, soapy water is recommended in order to preserve the original appearance of the products. 3) Use only nylon pads or scrapers to expel food residue. Metal pads will damage the porcelain. 4) Remove minor stains by rubbing them with a damp cloth and baking soda. For persistent stains, soak the inside of the cookware for 2 to 3 hours using a mixture of 3 tablespoons of household bleach per litre of water. 5) To remove stubborn, baked-on food, boil 2 cups of water and add 4 tablespoons of baking soda. Apply the liquid to the food and use a nylon or wooden scraper to loosen. 6) Dry your cookware thoroughly before storing. It cooks well, and the sides are curved a bit more so it is easier to get roux off before it burns. My husband says that this one is made in China if that makes a difference (?). We'll see how long it lasts. I have a Le Creuset from the 1930's and it's still going strong. :)

## Questions & Answers

**Q: Is it made in the USA**
A: Yes, they are made overseas, not in the USA. I've had my pan for 7 years now...and it's used weekly, and more often in the winter months. I was a bit disappointed when it came and I realized it wasn't made in the USA but decided to give it a chance. After 7 years of hard use I can honestly say it's the best pot I have ever owned! It's discolored a bit, not surprising with the amount of use it gets and all the soups stews and roasts I make in it throughout each year. But that hasn't affected the pot at all. It is just a good as it was when I first bought it. I'm going to try the 1 cup baking soda and 4 cups water trick  (boil 5 min let sit with the lid on for 2 hours) that I read about in one of the other questions to see if it will return to it's original beige coloring, but even if it doesn't, it's still going to be my "go to" pot for everything I can use a dutch oven for :-) I highly recommend this pot, even though it's not made in the USA!

**Q: Flat bottom suitable for glass top range?????**
A: It's too heavy and will scratch it. It's a shame that glass top ranges even exist. They don't conduct heat well, hold on to heat far too long after it is turned off, and of course, you need perfectly flat cookware which is usually the crappy teflon stuff rather than cast iron and stainless. The only advantage of them is that they are really easy to clean.

**Q: One person mentioned that you shouldn't heat when empty, but I want to bake bread, and it needs to be hot first. Will this damage it?**
A: Apparently artisan bread bakers are heating it empty without problem, but Lodge says fill it halfway with water, preheat, then dump the water out before baking - I don't know it that works for all, but it gets it to 212F (100C) and if you need a higher temp, perhaps do that first then dump the water out to minimize the time it's been empty before it reaches your temp.Google/search "lodge dutch oven bake bread" and look for the link to "Baking Bread in a Dutch Oven" at the artisanbreadinfive site.  The points I mention above are in the comments.

**Q: Is this seasoned?**
A: The interior of the pot is ceramic.   It's not possible to season it.  Seasoning is only for cast iron that is not covered with ceramic.  The only thing you must pay attention to is: wash it well.  And don't chip it --- which is not easily done.  OK?

Recommended by the New York Times' Wirecutter. So far it's been really great for a fraction of the price of a Le Creuset of similar size. It cooks well, and the sides are curved a bit more so it is easier to get roux off before it burns. My husband says that this one is made in China if that makes a difference (?). We'll see how long it lasts. I have a Le Creuset from the 1930's and it's still going strong. :)

Finally bought a big enamel dutch oven that's affordable, well made and very good looking! I put 3 whole chicken leg (about 300gm each), 4 thighs (about 600gm), 4 chicken wings (about 600gm), 2 onions, and 4 packets of brown shimeiji mushrooms into the 6-quart dutch oven and baked them in an oven. The meat turned out really well. They were soft and juicy and the whole family loved it. The next time I cook this dish, I will experiment with shorter baking time & lower temperature.
