This makes up something like cream-of-wheat, except it thickens even more as you cook it...a little goes a very long way. It's amazingly satisfying, leaving my body feeling grounded, in a calm kind of way. There must be a nutrient in it my body really benefits from. Not sure what that nutrient is, but my body clearly likes it. I'm Gluten sensitive, so my grain intake is very limited. Fonio has filled a gap in a most satisfying way. Rice, corn or wheat never satisfied my body the way Fonio does.
