It has a strong cheddar flavour with an Edam like consistency. I would be hard pressed to say it wasn't real cheese if presented with it on a cracker. It doesn't melt like cheese which is a shame, but you can grate it finely which means you can use it on pizza. The flavour was way too strong to be described as Mild or cheddary. As soon as I opened the packet, it stunk out the whole kitchen. The flavour is nice in small chunks, but the description is very misleading.
