Many people treat them like herbs and make tea with them, so that tells me they transfer their herbal benefits to the water so what I do now is place a week's worth in a jar and cover with filtered water; I eat 3 a day and after I eat the last one, I drink the soaking water, which by this time has begun to ferment, like cider, and has a pleasant taste and light fizziness. It's a good way to get the benefits of both "tea" and the dates and fiber etc. themselves.
