Product description Buy Wheat Berries grown from the fertile soil of Washington State. The Mader family has been involved in agriculture for five generations. Our farm operations span across the south east part of Washington State and are headquartered in Pullman, WA. In 2001 we acted on an opportunity to add a grain and legume cleaning facility to our operation. Our Cleaning Facility, Palouse Trading is located in Palouse, WA - just a short drive from Pullman. Palouse Trading was originally named Wallace Grain and Pea when it first opened its doors in the 1930's. The plant was designed for quality not quantity and has cleaned legumes and grains for the international market and domestic consumption. Our food is appealing to our consumers because of its nutrition, aesthetics and traceability to our farm. Each bag of food comes with a QR Code that allows you to see harvest details of your food, seeding dates, the field we grew it in, and more. All of our products are certified Kosher Parve, Non-GMO Project Certified and our farming methods are Certified Sustainable by the Food Alliance. ## Questions & Answers

**Q: Is there a nutritional difference between the red and white wheat berries??**
A: Hard winter wheat, has reacher nutritions and micro elements than the spring wheat. The spring wheat usually has shorter vegetation period and after the wheat harvest, the land is used for raising other crops. The product may be cheaper. I prefer red hard winter, this is the traditional seed color and I make whole wheat sourdough bread.

**Q: Which whole grain would you use to replace KA bread flour?  And would you add gluten for the protein?**
A: I use a wonder mill to grind hard, white, wheat berries into flour about once a week, and then I make the loaves in a bread machine.  Naturally, it makes whole wheat bread.  But, it tastes far better than store-bought, wheat bread or even home-made bread using KA whole wheat flour, because I’m grinding the wheat as I need it and it doesn’t have time to go rancid.

Note: whole wheat flour doesn’t rise as high as KA white bread flour because the bran inhibits the gluten structure.  You can partially overcome this by making a preferment the night before.  Or, you can add Vital Wheat Gluten to the wheat flour.  I do both—I make a preferment and I also add wheat gluten to my ground flour.  My loaves turn out awesome and they still retain the nutrient-rich bran.

**Q: can these be used inside salads like Trader Joe's curry cauliflower wheat berries kale salad? hard or soft?**
A: Yes..but..you mead to cook them first..they are berries..so hard

**Q: Are these winter berries?**
A: Winter white berries are soft. Spring white berries are hard, so these must be hard white Spring berries.
