It is produced at temperatures below 118 degrees Fahrenheit to protect the natural enzymes, so it is the perfect, all-purpose sweetener for natural and raw food enthusiasts

Review: Note: Use 4-5 quarts raw agave for 5.5-6.5 gallon batch and make sure you follow the basics. 5.2 acidity (get a meter!!), , keep temp between 75-85 degrees (I found 80-83 degrees works off the best) most importantly use a friggin Turbo Yeast/ Dady yeast + yeast nutrient. Dady yeast for the strong Spirit de Agave Azule. Fermentation starts within the hour. Under-note: To adjust wash/ wort toward more acidic add lemon juice. To adjust wash/ wort more neutral use very small amounts of baking soda (very little moves it a lot). Remember 5.2 acidity ALWAYS and across all washes/ worts, well, basically. Also usually no need for bung/ bubbler when using Turbo yeast. To cool wash/ wort quickly and cheaply, wrap wet towel around stainless/ glass fermenter, blow a fan breeze across wet towel. Bottom line, IT ABSOLUTELY FERMENTS, WHEN YOU KNOW YOUR CRAFT. Not for the backwoods schooled, if you can’t think on your feet.
