You just have to use the most authentic ingredients that yo can; and I did. Rey del Arroz Bomba rice is the rice for paella. I will find out other Spanish recipes to use the for as well, but if you are making paella, this is it. The consistency for both day of eating and leftovers is superb. Even though I cooked it a little long for my first paella, it absorbed flavors well and was the hit of a Father’s Day dinner. Muy elegante y perfecto!
